Easy Chicken Teriyaki Sushi

I'm a big sushi fan. However I'm really not a fan of raw fish so I always go for the meat and vegetable dishes. One of my favourites has to be chicken and avocado. As you may be aware it's one of my favourite combinations for everything and sushi is no exception.

The one thing that gets me about sushi though is that it's just so expensive, or I should say, it gets so expensive as it's so hard to stop grabbing things of that conveyer!

Here enters my easy chicken teriyaki sushi recipe...

What you'll need is:

- 1 1/2 cups of sushi rice
- 3 tbsp rice vinegar
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- 2 tbsp honey
- 2 chicken breasts, cut into strips
- 1avocado, cut into strips
- 4 nori sheets
- mayonaise

-some pickled (sushi) ginger and soy to serve

I used a sushi pack which comes with the sushi rice and nori sheets and of course the bamboo rolling mat.

First up you need to get your amazingly easy teriyaki sauce going. Just pop your soy sauce, sesame oil and honey in to a bowl (I also added a little ginger and garlic but don't worry if you don't have any), give it a mix and stir in your two chicken breasts and leave to marinate while you get on with your rice.

Rinse your sushi rice under cold water then add it to a saucepan with 2 1/2 cups of cold water. Bring it to the boil, cover and leave it to simmer for about 12 minutes. Remove from the heat and leave, with the lid on, for 10 minutes.

While your rice is sitting there get your marinated chicken in a hot pan with a splash of sesame oil and cook until the meat is white all the way through. (This won't take too long as it's cut into strips.)

After your chicken is cooked through take it off the heat and leave it to the side just while you mix the rice vinegar through your rice, breaking up any clumps as you go.

Now for the messy fun bit. If you happen to have one of those disposable plastic gloves lying around use that but, if like me, you don't have one a plastic sandwich bag will do just fine!

Lay your bamboo mat out (I read after it's a good idea to put it in a sandwich bag so cleaning it is easier) with a nori sheet on top and then put your hand in the glove/bag and pop an elastic band round your wrist to keep the bag there.

Squeeze a little mayo onto your bagged hand and smoosh it around until your fingers are covered. (I am completely aware this all sounds ridiculous but sushi rice is one of the stickiest substances known to man and you'll thank me for it later!)

Grab a small handful of the rice and spread out evenly over the nori sheet leaving just over an inch at the top rice free.

Then you need to layer on your chicken and avocado.

If avocado isn't your thing you can of course use strips of cucumber, carrots or anything you can think of really!

Now you need to roll it (then rope your mum in to roll one so you can take pictures!)

The rolling is pretty easy, you just need to lift the side of the bamboo sheet closest to you and wrap it over your fillings. Give it a squeeze and then keep rolling, making sure you don't include the mat in your rolls! (Skip to 1:40 on this video and have a watch, much easier than me explaining it!)

Just when you get to the end of the nori sheet dip your finger in some water and dampen the edge of the nori so it sticks closed.

And there you have it! Just keep going until you run out of ingredients.

All you need to do now is get a very sharp knife and slice them in to even pieces, maybe chop off the ends first so they look neat and eat them before anyone else can!

Then arrange artfully with some pickled ginger and some soy sauce and call in your family/housemates/pets to admire your handiwork!
